Poached Eggs on Sourdough with Sliced Cucumber
Delicately poached fresh eggs served atop warm, crusty sourdough toast, accompanied by cool, refreshing sliced English cucumber.
Poaching requires zero added fat or salt. Cucumber has a high 96% water content and very low mineral concentration, making it an ideal kidney breakfast side.

Cooking Instructions

Bring 3 inches of water to a gentle simmer in a saucepan. Add 1 teaspoon of white vinegar.

Crack an egg into a small ramekin. Create a gentle whirlpool in the simmering water with a spoon, and slide the egg into the center.

Poach for 3 to 4 minutes until egg whites are set but yolks remain soft. Remove with a slotted spoon and drain on a paper towel. Repeat with second egg.

Place one poached egg atop each warm sourdough toast slice.

Dust with black pepper and dried dill, and arrange fresh cucumber slices on the side.
