Heat 1/2 tablespoon of sesame oil in a large skillet over medium-high heat. Pour in beaten egg whites and scramble for 1 to 2 minutes until just cooked. Remove to a plate.

Add remaining 1 tablespoon of sesame oil to the skillet. Add shredded cabbage and carrots, stir-frying for 3 to 4 minutes until crisp-tender.

Add the cold white rice, breaking up any clumps with a wooden spatula.

Drizzle with low-sodium soy sauce and season with garlic powder and black pepper. Stir-fry for 3 to 4 minutes until the rice is heated through.
