POTASSIUM LEACHING: Place cut green beans and carrots in a pot of water, boil for 5 minutes, then drain and discard the water.

In a clean soup pot, heat olive oil over medium heat. Add minced garlic and shredded cabbage, cooking for 3 minutes until softened.

Add 4 cups fresh water, leached green beans, leached carrots, thyme, and black pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 15 minutes.

Stir in the cooked white rice and lemon juice. Simmer 2 more minutes until heated through.
